I've been working on some documents with a colleague in London and it's driving me a bit bonkers that his spellings constantly trigger the spelling filter in iWorks. He just ignores it and blames it on me having created the document here in the States, but can't we just switch it to use British English?

I know this is a totally newbie question, but when I'm writing an email to someone in Apple Mail, I see certain words underlined with a squiggly red line, but if I click on them, nothing happens. Looks like it's the spelling system telling me that I have mispelled a word, but not always. What's the story? What can I do at that point?
