I'm really working on better organization and management of my email inbox and archives, and want to know now that I'm using Mac OS X Lion's new version of Apple Mail, whether I can rename or otherwise customize the "flags" that are included in the program?

I am a pretty heavy user of my Apple iPhone 4's email capability, constantly reading messages as they arrive and sending out responses after tapping madly on the tiny virtual keyboard. It works. My question is whether there's a way for me to see my sent messages on the phone, so I can check prior discussions I might have had with an individual??

I've been reading about the new priority inbox filtering system in Google's Gmail service, but am unclear how to turn it on for my own Gmail account. Can you explain?

Every so often I get an email message on my iPhone 3GS and want to save it for later, rather than have it vanish as it's replaced by newer messages in the mailbox. I can't see any way to save it, though, other than in folders, and I have a feeling I'll just forget what's there. Is there a better solution?
